The UK uses chip technology in their credit cards. So when you pay for something with your credit card, you insert it chip-first into a hand-held machine and then type in your PIN number. Most of the time you no longer need to sign the docket.
Westpac told me about this when I rang them the day before we left for our trip. They told us that we needed to go into a local branch before we left to register a PIN number on the card.
They also said this PIN technology will be coming to Australia soon.
